Time to Shed the Pounds
Ok ok ok… I know I have not been on here in forever! BUT I’m back after a small hiatus. Like so many of you, it’s diet time in our house. This is typically what I do after eating way too much fattening food after the holidays. A new year… a new promise to eat healthier and SHED THOSE LBS (pounds)!
In the past, I have always had a lot of success on Weight Watchers. So, now is the time to start counting points again. Seems like Weight Watchers has been everywhere lately. Dr. Oz is promoting it. If you watched two seconds of the Rockin’ New Years Eve with Dick Clark, you probably saw enough Weight Watchers commercials to make you scream.
BUT it does work! Many years ago I lost 100 lbs. on this program. It forces you to use portion control and to choose healthier foods (for lower points) but it does not deprive you. You can still eat out on this program. If you have never seen this website, Dottie’s Weight Loss Zone. It is amazing!!! It has practically every chain restaurant on the planet and gives you a point break down of their menu.
The recipe I’m going to share with you today is for cauliflower chips. These are so good! You won’t even remember you can’t eat potato chips. These are also a great snack for kids. It gets them (and you) to eat their veggies without a battle!
2 points for entire pan
1 head of cauliflower, sliced thinly
2 tsp. of olive oil
Preheat the oven to 500 degrees.
Slice the cauliflower as thin as you can and try to keep everything the same thickness. Coat the cauliflower with olive oil and lay out in a single layer on a dark cookie sheet. Sprinkle with salt and pepper to taste.
Bake for about 15 minutes or until desired crispness.
You may think it’s burning but that’s the yummy part.
